I like to drink the smoothie as a midday snack on a hot day, but it would really be wonderful to serve at a brunch. I try to slice and freeze the peach at least an hour before adding it to the smoothie - that way you don't need to water down the drink with any ice cubes. You can cut up the cantaloupe and freeze the peaches ahead of time to make the smoothie really easy to throw together at the last second. If you have a peach that's really ripe and don't want to use it right away, just slice it up and freeze it to make this smoothie at a later time.
Cantaloupe-Peach Smoothie (Makes 2 servings)
1/2 cantaloupe, seeded and cut into cubes
1 ripe peach, frozen (if the peach isn't frozen, add about 4 ice cubes to the blender)
1/4 cup nonfat greek yogurt
1/4 cup almond milk (or soy or low-fat regular milk)
1/2 Tablespoon almond butter
1/4 teaspoon vanilla extract (or almond extract if you have it)
Dash of cinnamon
Add all of the ingredients to the blender and blend at the highest speed until smooth (30 seconds to a minute depending on your blender).
